A few food favorites...

Zay has taken to a couple new foods lately...yay for a little variety! 

The first new food...Biscoff Spread. Sort of like his version of peanut butter! And the best part is...you can buy this stuff locally! I found it at Wal-Mart...yippy! I tried it and in my opinion tastes like graham crackers! Not too bad at all! 

 

Zay's lunch...I started out giving him 1/2 slice of regular toast and 1/2 slice of toast with the Biscoff Spread on it...he didn't hesitate eating the stuff that looks just like Daddy's breakfast! And a little homemade applesauce to top it off!



The other food of choice...smoothies! I think I've mentioned it before, but Zay has never tried juice yet. He drinks either his 'milk' (aka formula) or water. So smoothies must taste really yummy to this guy, because he finishes his off without any hesitation! Yummy!

Routine & Change

We are gearing up for our next appointment in Iowa City with our PKU doctor/dietitian, and because I know change is coming, I thought it is a perfect time to document what has been our routine for a long time. Long time meaning at least for the past year, maybe as far back as when Zay was 9 months old! 

We do it every morning. It doesn't matter if it's Monday or Saturday, whether we are traveling or at home, or if it's Mommy or Daddy who does it - we have a routine. And Zay always remembers how it goes. 


We make "Zay's milk". 

We will soon be adjusting his formula to allow him to have a little bit bigger portions at his meals. The boy just keeps growing and his levels have been creeping up, so I contacted our doctors to let them know that it's time to increase the Phe from food and decrease the Phe from his milk. 

And today, because it has become such a common story-line in our house I decided to take some pictures of just how predictable our mornings have become. And I thought capturing the moments of this scenario would make it a little more endearing, the next time I'm heckled halfway through my bowl of Wheaties. :)

The very first thing on our agenda in the morning is Zay's thyroid medicine. I'm usually slipping the little pill into his mouth while he's racing around the house trying to catch-up with Daddy before he leaves for work. Technically, he's supposed to have his medicine 30 minutes before he has anything to eat or drink. This can be a little unrealistic to a demanding 2-year old, but we do the best we can! 


Usually once Daddy is out the door we get sat down for breakfast. We always have a sippy-cup full of formula from the day before for Zay to have with his breakfast the next day. Just works out better for us to schedule it like that, so he has something already made up first thing. 

However, it doesn't take long before he thinks it's time to make more. (It makes no difference to him if he actually needs more formula or if he is just ready to help make his milk!)

After explaining to Zay that "Mommy will make you more milk after she finishes her breakfast", this is what I see...Zay taking matters into his own hands! Hauling, dragging, staggering across the kitchen floor with the first ingredient to his formula! 


He's very good at getting the ball rolling. The other day he brought a box of his Macaroni & Cheese to Shane, then came to find me because Shane wasn't getting up to do the job (To Shane's defense he was taking a quiz for his graduate class!). The next thing I know, Shane is calling me because Zay is pulling the pots and pans out of the cupboard in order to make his Mac & Jack. The boy takes initiative! 

I've always been insistent on letting Zay help in the kitchen from a young age. I know that cooking is going to be a big part of his life, so I'm determined to let him help and get him interested! In turn, he consistently knows there is a place for his chair by the counter!


Then the mixing begins...

170 grams of skim milk. 
Add 1.8 mL of his iron drops.
Add 1 mL of his vitamin. 
Add 90 grams of Periflex Junior.
Add water to make approx 25-30 oz.


I assure you - if we are in a hurry to make up his concoction, I will NEVER get the milk and formula to hit exactly the 170g and 90g on the scale the first time. There will be adding and subtracting...adding and subtracting, until I finally get the scale to read correctly!


After the water is added...Zay's job comes in. We sing a little "SHAKE, SHAKE, SHAKE!" song and he goes at it!


FINALLY...time to get the sippy cup filled up! 


Then....only then, is our boy satisfied with the work we've done. And mom can get back to her soggy Wheaties. ;)


And he's such a obedient little boy - he even puts his chair back after we're done. Multitasking of course...drinking his milk while pushing his chair!


Clearly, it's time for trains after all that...


Or maybe a book to read? .......Let's be real - he's fishing out a Leap Frog video to watch. But the books will come. Guaranteed. And most likely, it will be before my Wheaties are gone.



Undeniably, at times, I yearn to just be able to go to the fridge, grab milk, juice or whatever else I can find and fill up Zay's cup. No measuring. No scale. No calculating. Seems so simple. So quick. And to have the option of letting someone else get him a drink, seems like heaven at times! 


Nevertheless, how content I am with going through this process each day. It means that I get to teach my little boy. I get to show him that I love him in the simplest ways. And I will make his milk for the rest of my life if it is how my love is displayed best. He will know he is special. He will know he is loved. I will be sure of it!

Graham Crackers!

Last weekend I made Zay some homemade graham crackers! He loves them, and they are an easy snack! I think next time, I'll make more and keep a stash in the freezer for him!

PKU Cooking Class - 2011

Last year we attended a cooking class to learn some tips, tricks, and tactics to cook lo-pro style! In case you don't remember - Zay looked like this....


Well this year we attended another one, and it was nice because Zay actually is old enough to eat the food we were cooking. Plus, this year's speakers/presenters had much more kid-friendly recipes for us to cook.

We made everything from a basic fruit salad, to yummy pumpkin donuts (baked, not fried...a little bit better for ya, right! Ha!)

We also made a cranberry dish that will go along with our Thanksgiving meal, and a fabulous squash dish. Plus, garlic bread that was AMAZING! Every single one of the dishes we made was fantastic and could easily be made for the entire family, not just the PKUer in the family. Lastly, we sampled some strawberry-mango ice cream - yumo!

We received a cookbook for free since we attended the Lo-Pro Cooking Day, and then we bought Gina's first cookbook as well.

Some other random notes I took during the dietitian's presentation...
-90% of PKUer's protein is from their medical food and formula
-Simple carbs, are less nutritious, however have low phe. Complex carbs which are better for most of us have higher phe, so not as common in the PKU diet.
-Fats provide more energy that any other food and protects the body from colds and illness. Fats aren't all bad!
-Canola oil is better than olive oil, because it contains both omega 6 and omega 3, whereas olive oil only contains omega 3. These oils also contain monounsaturated and polyunsaturated fats which are the good fats...unlike saturated fats.
-Trans fat = BAD...ok, we already knew that!
-Phytochemicals - part of fruits and veggies that help protect against heart disease and cancer.
-Trace metals help the body run smoothly (found in soil, so these are found in fruits/veggies that grow in the soil)

Strawberry Jam

I learned how to make Zay (and us!) some strawberry jam! And is it SO good! My friend Lindsay came over and we diligently followed every step to make our homemade strawberry jam from our hand-picked strawberries! Oh so yummy!

We recently headed out to Heartland Farms to do some strawberry pickin! We had such a great time... especially Zay! What more could a little boy with PKU want...a place where he could actually eat whatever he wanted!!

Yep...I did my part in picking! (While Daddy watched Zay run around) And you can see Grandpa, Grandma, and our friend Lindsay in the background. What a fun afternoon!

Cinnamon Rolls

It's been awhile since I've posted a food update...well, that's probably because our precious little boy has become quite the picky eater. BUT, I guess it's probably not your typical picky eater, because he still eats broccoli, carrots, cauliflower, asparagus, apples, bananas, strawberries...so LOTS of fruits and veggies. However, we've gotten into a rut of main dishes. Basically Zay likes to eat broccoli casserole or his lo protein macaroni and cheese. Sometimes we can slip in a grilled cheese and he will accept it, but it's on his terms.

Recently, I attempted to make cinnamon rolls for a special breakfast for Zay. Like I expected he liked these for a couple days...now they will sit in the freezer until he decides he likes them again!

Food!

I've recently done some focusing on Zay's food. I'm continually trying to find some new and creative dishes that Zay will like! Recent things we are buying and making...


Goulash
This basically consisted of tomato sauce, cream style corn and low protein noodles.

Of course - weighing out portion sizes so we can freeze them.


Biscuits! Made with his special 'mix quick' and non-dairy coffee creamer! I think these are pretty tasty!

Of course the standard loaf of bread! I probably make a loaf for Zay every 2 weeks. I'm sure that will only increase as he grows!


And for fun...a couple snacks/treats I found for Zay at regular 'ol HyVee!! So exciting when I can find some food (besides fruits and veggies) that is low in Phe and it can be bought locally!

Haagen-Dazs Sorbet! I haven't had Zay try this yet, but this will be Zay's alternative to ice cream. I'm sure this will be a great summer-time treat!


Pretzels! Zay can eat the Gluten-Free Snyder's pretzels! I sometimes get questions from some of our friends on what they can have at their house when Zay comes over. When I discovered these and realized how low in Phe they are - I think this is what I'll have to start sharing as an easy snack for Zay!

Sippy Cup Conundrum

This morning Shane and I spent 20 minutes looking for a sippy cup. Not joking! We were both late for work, because of a sippy cup! This is not the first morning a sippy cup has gone missing, but this WAS the first time we weren’t able to located the hidden cup within a couple minutes.

Zay has had a fascination with putting things ‘in’ and ‘under’ and ‘squeezed between’ and ‘thrown into’ for quite some time. Not to mention our little black fur-baby that loves to carry things off and hide them as well. For example, just the other day we were leaving to go to church and Shane spots a black article of clothing in the mound of snow near our backdoor, then asks…”Why is my SOCK outside in our backyard?”. Thank goodness it was only a sock, we could really get the neighbors talking if we had some undies chillin in our snow banks.

So anyway, back to this morning’s sippy cup. Isaiah is sitting in the middle of our living room while mom and dad attempt to turn the room upside-down in order to find his cup. You see, we didn’t know how much of Zay’s “milk” he had actually drank that morning, so we didn’t know the amount of Phe he’d gotten. Hence, the great need to locate the cup. Oh, how I wish I had a video camera of the entire episode. Shane would look at Zay and ask “Zay, where did you put your cup?”. Zay would look up at him, raise his eyebrows and give the most innocent smile. I’m positive I looked under our couch, loveseat and chair 10 times. And Zay would watch me and then imitate me, as if he was giving me some sort of support by helping me look.

If you ask my husband, I can get very annoyed when something is displaced. I’m pretty sure Shane hates my saying “everything in our home, has a home”. However…this morning while I was carrying Zay to the car, I just had to laugh. Isn’t life all about perspective. To one parent a lost sippy cup is a bummer because you know one day you will find it old, smelly and moldy and probably throw it out to avoid dry-heaving after smelling it. To another parent a sippy cup is worth 20 minutes of searching in the morning and being late for work.

In the end, the sippy cup was located…in the corner of our living room. Next to a toy he hardly plays with. Hidden between the leg of our chair and the dog bed. All is well. Zay was incredibly excited to see his cup and finished his “milk” immediately.

And the real kicker of this story? While walking to the car to get Zay loaded, thinking about the comedy of this morning’s sippy cup extravaganza, I spot TWO socks in the snow…luckily, still no undies.

Broccoli Burgers

Zay's latest favorite food... broccoli burgers! I'm not sure I'd ever heard of broccoli burgers before seeing it in our PKU recipe book, but I thought I'd give them a try and they were a success! Zay loves them. I'm not sure I've ever seen a 1-year old eat onions and like them, but Zay does! And thank goodness for that!

Bread!

Recently I made my first homemade low protein bread from scratch! I tasted it and it's pretty good! Zay hasn't been too excited about it yet, since he is getting over the flu, but hopefully he likes it too! I think this will be the first of many loaves I make from scratch, because buying it pre-made is EXPENSIVE - $11.99 per loaf (before shipping)!

PKU Picnic!

This past weekend we headed to Waukee to attend our very first PKU Picnic/Fundraiser. We had a such a great time!

It was a lot of fun to see some other kids with PKU and meet their families. I enjoyed talking with some other moms about how and what the cook for meals. (I have so much to learn!) And overall it was just really great seeing everyone make a special day for all "PKUers".

We were asked to bring one low-protein dish and one normal dish to share. So...I tried my first low protein bread. Strawberry bread! I have to say, it really didn't taste great to me, but I'm sure there will be a lot of dishes that are an acquired taste. As long as I can find things that Zay likes, that will be all that matters!

This is Dallas - he is probably the most famous PKUer in Iowa. Seems like I've seen him in a number of publications and he is a GREAT role model. He gave a speech while we were there, talking about how he handles his diet at school. He explained how he continues to go about his life like a normal teenager, enjoying school, sports and friends like everyone else!


The whole PKU clan! At least the ones that were there that day. From what we know Zay is still the youngest in Iowa.
